Dr Fong dirige un programme de recherche en microbiomique alimentaire axé sur l’atténuation des agents pathogènes (Salmonella, E. coli vérotoxinogène). Son groupe utilise principalement la technologie omique pour caractériser les nouvelles méthodes et s’assurer de la salubrité et de la sécurité de l’approvisionnement en aliments des Canadiens. Ses autres intérêts de recherche incluent la métagénomique alimentaire et environnementale, la résistance aux antimicrobiens et la microbiologie des produits alimentaires frais.

Dr Fong détient un doctorat en science des aliments de l’Université de la Colombie-Britannique.
