Abstract
Standard methods for the bacteriological analysis of meat are published by both governmental and non-governmental organizations and provide detailed instructions for sample analysis, and the interpretation of results. The reliability of the performance of these methods has been confirmed by validation trials. Standard methods may be qualitative, or quantitative, and are available for bacterial pathogens, and non-pathogens used as indicators of product hygiene or quality.

In this chapter, major publishers of standard methods for the bacteriological analysis of meat are identified. The principles of both qualitative and quantitative bacteriological analysis of meat is described. To assist readers in selecting and deploying standard methods in an effective testing program the chapter includes discussion of the purposes of testing, sampling plans, and how testing data can be used to inform action to maintain, or improve, product safety and quality. Specific sections are provided on spoilage organisms, and the bacterial pathogens associated with meat products.
