Abstract

Barley is rich in several health boosting components. Health benefits of barley have been attributed mostly to dietary fiber, essential fatty acids, vitamins and antioxidant phytochemicals including several phenolic compounds. One of the most important use of barley across the world is as malt for beverages or malt enriched food products. There is a need to assess those compounds in the barley grain, malt and brewers' spent grain (BSG) as well as to evaluate their utility. This final report is providing information on the work conducted in this area of research during the length of this project.
