I study the content, composition, stability and bioactivity of carcass lipids from agriculturally important livestock species.

My current projects are on

  • Larger Scale enrichment and testing of Bioacitve Beef Fatty Acids
  • A nutritious modern pemmican and a stepping stone to other traditional meat products. 
  • Innovative dietary strategies for enhancing shelf-life and healthfulness of trans-18:1 and conjugated linoleic acid (South African collaborative project).
  • Canadian National Beef Quality Audit at Retail and Processing (collaborative project on for nutritional evaluation)

My research is mainly part of the Agri-Innovation program – Stream A – Food Safety initiative with the strategic objective of improving the attributes of food to improve the profitability and competitiveness of the agriculture and agri-food sectors.
