My current projects are on
- Larger Scale enrichment and testing of Bioacitve Beef Fatty Acids
- A nutritious modern pemmican and a stepping stone to other traditional meat products.
- Innovative dietary strategies for enhancing shelf-life and healthfulness of trans-18:1 and conjugated linoleic acid (South African collaborative project).
- Canadian National Beef Quality Audit at Retail and Processing (collaborative project on for nutritional evaluation)
