I work to ensure the delivery of high quality, healthy, and value-added Canadian horticultural and agri-food products. My research focusses on improving food attributes and increasing agricultural productivity through developing value added products and reducing food waste which helps to support food security. 

Current research and/or projects

Title of Project: Understanding Indigenous food systems and revitalizing key Indigenous food plants in Interior and Coastal regions of British Columbia (#2951)

Dr. Ross is advancing knowledge of Indigenous berries (soapberries, huckleberries and Saskatoon berries) and value added products.  Also, a key aspect of Dr. Ross’ work is to support Dr. Samir Debnath’s black huckleberry propagation work.  

Title of Project: 'Omics' approach to improve attributes of apple fruit (#3084)

Dr. Ross is examining the mechanisms determining textural quality attributes of diverse apple germplasm through biochemical and spectral analyses with the long term aim of providing a rapid tool to support germplasm development.

Title of Project: ASC-13 Organic Cluster Activity #24:  Optimization of berry by-products use in organic poultry production (#2196)

Dr. Ross is responsible for obtaining pomace material, stabilization of pomace material for experimental analyses and poultry feeding trials along with chemical characterization of pomace material.

Title of Project: Optimizing fruit-pomaces to modulate gut microbiome while controlling necrotic enteritis antibiotic-free chicken production (#2574).

Dr. Ross is examining the drying kinetics of blueberry, cranberry and grape pomace using an industrially relevant method (cabinet convection air dryer) along with assessing bioactivity of the pomace and optimizing drying conditions to ensure bioactivity is maintained. 

Title of Project: Cherry flavour quality retention (#2840)

Dr. Ross is assessing the effect of maturity on sweet cherry flavour quality retention (at harvest and upon storage) to ensure a successful and competitive BC cherry industry through provision of high quality/good flavour Canadian sweet cherries to overseas export markets. 

Title of Project: Defining the influence of preharvest factors on the quality attributes of freshly harvested and stored sweet cherries  (#1109)

Dr. Ross examined the effect of orchard production practices on sweet cherry attributes (at harvest and upon storage) in terms of bioactives and nutrient contents, and other quality parameters including firmness to ensure a successful and competitive BC cherry industry through provision of high quality Canadian sweet cherries to overseas export markets.

Project Title: Development of innovative processes to produce a premium quality craft hard cider based on use of existing dessert apple cultivars grown in British Columbia

Dr. Ross supported BC Tree Fruits in developing a high quality hard apple cider from British Columbia apples culled for physical imperfections.  Currently BC Tree Fruits has commercialized the process and the product has been on the market since 2015 (Broken Ladder Apple Cider).

Dr. Ross’ research drives development of healthy, high quality agri-food products with enhanced functional attributes for Canadians and non-domestic consumers while also ensuring a profitable and resilient industry sector.

Professional activities / interests

Dr. Ross works to create new market opportunities for agri-food and horticultural products through value added processing, reduce food waste, and support food security.

Dr. Ross' research supports advancing knowledge of Indigenous berries and value added products.

Dr. Ross' research strives to provide Canadian and non-domestic consumers with products that can be readily identified to offer specific attributes and aims to ensure a profitable and resilient sector.

Dr. Ross has worked to provide new knowledge on identifying novel bioactive compounds (conjugated polysaccharides) in fruits, information that is necessary for resolving the issue of enhanced bioactivity of whole foods versus purified extracts and potentially future health claims.
